The Icelandic pancake pan has been one of the corner stones of Icelandic food culture for decades. A good pan can be handed down from generation to generation and is a „must have" in any household.
In 1943 this pancake pan were first manufactured in Iceland. The pan is casted and then hand finished. Cast alloy with wood handle (not suitable for induction stove). Diameter is 20 cm (7.9 in). MADE IN ICELAND.
Icelandic Pancakes recipe #1 (old family recipe)
450 grams wheat
75 grams oil or melted butter
1/4 teaspoon baking soda
1/8 teaspoon salt
100 grams sugar
1 liter milk
Egg and sugar whipped together, wheat, baking soda and salt added, then the butter/oil. Milk added little at a time. Make the dough thick at first and then thin it out gradually with the milk, that way it is less likely to lump.
Serve with sugar, or your favourite jam and whipped cream.
Icelandic Pancakes recipe #2 (old family recipe)
250 gr wheat
1 teaspoon bicarbonate of soda
½ teaspoon baking powder
1 tablespoon Sugar
1 teaspoon vanilla extract
about ½ liter of milk
50 gr of melted margarine
To add a little twist to the recipe, try a little bit of Maltextrakt (Icelandic drink) or coffee. Use less milk instead.
Mix dry ingredients together. Mix the eggs and add them to the dry mix. Add vanilla extract.
Milk added little at a time. Make the dough thick at first and then thin it out gradually with the milk, that way it is less likely to lump. End with the melted margarine.
Serve with sugar, or your favorite jam and whipped cream.
